Tenderstem® broccoli and spiced chicken burrito
Method

For the salsa, combine all the ingredients, mix well and leave to one side.

Slice the chicken thighs as thinly as possible and place in a bowl. Add the cumin and paprika and then mix.

Add the olive oil to a large frying pan and heat on a medium to high heat. Add the chicken and leave for 2 minutes until one side is crispy and golden, then turn and cook for another minute. Finish with a squeeze of lime and season with salt and pepper. Ensure the chicken is cooked through, then leave to cool.

Wipe the same pan down and add 1 tbsp of olive oil and fry the Tenderstem®broccoli for 5 minutes and then leave to cool.

Heat the rice to packet instructions.

To eat straight away, assemble the burrito with all cooked ingredients still hot. If you’re preparing for tomorrow’s lunch, make sure all the ingredients have cooled before assembling.

Fill your tortilla up with a quarter of the rice, salsa, chicken, grated cheese, yogurt and Tenderstem® broccoli. Enjoy hot or if assembling for lunch, tightly wrap in greaseproof paper and tin foil and refrigerate.
